Instructions
Step 1: Prepare the Dough

Add water gradually and knead into a firm dough. Cover and let it rest for 30 minutes.
Step 2: Make the Filling
-
Heat oil in a pan and add cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Sauté for another minute.
Add boiled peas, mashed potatoes, and all the spices. Mix well.
Cook for 2-3 minutes, then turn off the heat and add chopped coriander leaves. Let the mixture cool.
Step 3: Shape the Samosas
Divide the dough into small balls and roll each into an oval shape.
Cut each rolled dough in half to form two semicircles.
Take one semicircle and fold it into a cone shape, sealing the edges with water.
Fill the cone with the potato filling and seal the open edge by pressing firmly.
Step 4: Fry the Samosas
Heat oil in a deep pan over medium-low heat.
Fry the samosas in batches until golden brown and crispy.
